| WINEMAKING | The grapes have been fermented in open vats
for
13 days,
drained and skins pressed. The wine has then undergone induced malolactic fermentation to soften the flavours. This has taken 7 weeks. Storage in American Oak barrels of various ages followed for a minimum of 4 years . It has then been medium and sterile filtered prior to bottling. |
| TASTING NOTES | Aromas
of pepper, vanillin and sweet plums. Sweet vanillin, and intense dark
plum extend to the palate, and with subdued oak give a creamy mellow
taste which lingers at the finish.
