| WINEMAKING | The
grapes have been fermented in open vats
for 21 days,
drained and skins pressed. The wine has then undergone induced malolactic fermentation to soften the flavours. This has taken 8 weeks. Storage in French and American Oak barrels of various ages followed for a 5 and a half years. It has then been medium and sterile filtered prior to bottling. |
| TASTING NOTES | Light
rum & raisin aromas. Flavours of plum & licorice with a hint of spice, almost sweet to the palate. Long barrel ageing contribute to the smooth character of this wine. James Holiday Wine Companion: A remarkable testament to the very cool '02 vintage, for Swan Hill grenache should normally be drunk asap; spicy and savoury flavours are offset by a flash of heat (ex alcohol) on the finish.
